This is probably one of my favourite slow cooker recipes ever. I’m beginning to really love my slow cooker after a turbulent past and I’m putting it to good use now the nights are drawing in earlier and the temperature has dropped.

This recipe is simple, quick to prepare and easy to do. Here’s how..

Ingredients

  • 2 bags of prepared butternut squash and sweet potato
  • 1 swede – middle scooped out as per singing swede guidelines
  • 1 packet of bacon (chopped up with all fat removed) or you could use low fat sausages
  • 1 onion, chopped
  • 1 can chopped tomatoes
  • One cal low fat cooking spray
  • 2 Garlic cloves, crushed
  • 1 teaspoon of rosemary
  • 1 teaspoon of dried parsley
  • Squirt of tomato puree
  • 2 vegetable stock cubes with 275ml of boiling water

Method

  • In a saucepan, spray the low cal cooking spray and fry off the bacon, garlic and onion until cooked through.
  • Place all the ingredients (including the cooked bacon, garlic and onion) into the slow cooker, give it a good stir, put the lid on and cook on a medium setting for between 7 – 8 hours.
  • Serve with green vegetables
  • Enjoy!

sausage stew

We have had this meal on a number of occasions recently. We replaced the bacon with low fat sausages (Sainsburys Healthy Living Sausages are only 1 syn each) and it made a very yummy alternative to bacon. Of course you can add whatever vegetables you like but this is a really tasty stew with lots of flavour and is really filling.
