It feels like it’s been a very long month for meal planning. I think it’s been a particular challenge with food shopping, planning meals with foods that are in the cupboard and the freezer. There’s an extra challenge of sourcing ingredients at the supermarket with social distancing and waiting outside in queues. It’s been an experience that is for sure.

We’re planning on doing half a weeks meal planning using up the last of the fridge bits and thankfully, Shilts gets paid on Thursday so we can get a proper food shop in. We’re always trying to use up the last fresh bits of fruit and veg with pasta or rice. Trying to make what we have in last a bit longer.

What’s on the meal plan this week

  • Toad in the hole with carrots and mashed potatoes
  • Chicken curry with basmati rice
  • DIY pizzas (I’m going to introduce Olly to making his own pizza base!)
  • Bacon Risotto with mushrooms and peas (a twist on our favourite risotto meal)

Breakfasts this week will be fruit and cereal, with toast and the boys usual pain au chocolat. Lunches will be pasta or sandwiches for the boys and no doubt we’ll have leftovers too.

Whilst this month has been hard work from a planning perspective, it’s been good to use up things in the cupboard and freezer and take stock of what we might need in next month. I’m hoping next month will be easier as food stocks are more plentiful in the supermarkets and local fruit and vegetables are more readily available thanks to being able to buy them online for delivery or drive-through purchases. It’s certainly been a challenge and one that may have changed businesses forever.

  1. It has been really challening to meal plan and getting the ingredients for the meals recently but I have found it easier and less stressful since I got a grocery shop delivered.
    Great meal plan. Have fun making your own pizza’s. My girls love to do that x

  2. Ooh bacon risotto, that sounds like a great idea – perfect for using up what’s left in the fridge in terms of veg too. It’s definitely more complicated at the moment.

  3. I think we need toad in the hole and pizza next week. We are also trying to use things up, it’s a good habit to get into, especially now.
