I’ve missed a couple of these posts over the last few weeks, I’ve just been so busy keeping the boys occupied and of an evening, just crawling into bed has been my priority. It does feel like Groundhog Day but the weeks are flying, this is Week 8 of lockdown / homeschooling now and our meal planning has definitely improved and helped the budget stretch that little bit further.
What’s on the meal plan this week
- Chicken kebab skewers with peppers, mushrooms, vegetable rice and salad
- Spaghetti and Meatballs
- DIY pizza (cheese and tomato for the boys / ham and mushroom for the adults)
- Battered fish and oven chips with mushy / garden peas
- Chicken korma, rice and onion salad
Food shopping seems to be much better and we’re able to get pretty much everything we need. We’re still only trying to shop once a week which means the salad runs out after two or three days but we’re using up lots in the fridge so there’s very little waste.
Did you see the Rainbow Fried Rice recipe I pulled together for an Aldi collaboration last month? It was for Stop Food Waste Day and it aimed to showcase that you can pull together a really nice meal with just a few basic ingredients.

We are finding less waste too using everything up and your aldi dish sounds great. and you can not beat meatballs

Sounds like a yummy week! I might give the chicken kebabs a go, that way they can be adapted even for the fussy eaters!
