After a weekend full of unplanned treats I really need a Meal Planning Monday to get me back on track. I don’t know what came over me this weekend, I just wanted to eat rubbish. I’ve eaten chocolate orange, popcorn and all sorts of other foods that have been completely off plan.

This week we have the fantastic fresh produce of our Riverford recipe box to use up. We have been sent a ‘Quick’ box with 3 meals in to review and although the recipes aren’t particularly SW friendly, I’m planning on adapting them every so slightly so that they won’t be full of syns and I can attempt to stay on plan.

The meals we have to enjoy this week include;

Chicken Chow Mein and Vegetable Stir Fry
Harissa Lamb Leg Steaks
Broad Bean and Frittata
Ham Hock Chowder
SW style ‘KFC’ chicken, wedges and salad

I made a really tasty mushy pea curry in the slow cooker yesterday which is completely synfree and was really nice. I found the recipe on one of the Facebook groups and adjusted the ingredients to suit my taste (I added more curry powder, mushrooms and chick peas) and I really liked it. I’ll definitely be making it again and might even put some meat in it next time so that hubby might try it.

It’s half term here this week so hubby is home with Little Mr and I’m working mid-week. I can’t complain too much as I’m only working two days this week but I’d still rather be at home with my boys. I’ll be enjoying my usual salads for lunch and alternating between Fruit N Fibre or Weetabix for breakfast in a bid to stay on track with my diet. Fingers crossed the weekends damage isn’t too big a gain! Have a great week everyone.
