We have all heard the saying that breakfast is the most important meal of the day. However, with rushing around on the school run, sorting packed lunches, getting ready and dressed, getting a healthy breakfast in can get forgotten, and something quick and easy to grab on the go can be the alternative. As breakfast sets all of the family up for the day, with the energy that they will have, it just shows how vital breakfast is. If you’re in a rut of toast or cereal and want to think about alternative options, then here are some recipe ideas to try. A lot can be prepared the night before which is ideal.

Slow cooker porridge
Oats are such a good food to have as part of your breakfast. They provide slow release energy which is important, as well as fibre and protein. They can leave you feeling pretty full too. If you put your slow cooker on overnight with porridge oats in and milk of your choice, then it will be warm and ready when you wake up. It can be topped with fresh fruit, syrups, or nuts and seeds, flaxseed are a popular choice as they are a good source of dietary fibre and omega-3 fatty acids, so there will be a topping for everyone to enjoy.
Overnight oats
Similar to porridge, except this time served cold, overnight oats are another winner at breakfast time. There are many ways to make them, but generally, they involve oats, milk of choice, and yogurt. Some involve chia seeds and adding in fresh fruit or a swirl of Nutella. Otherwise, you mix them all together, leave in the fridge overnight, top with your fruit or nuts in the morning, and then you’re good to go. If your family likes porridge then they will like overnight oats.
Brunch with fish
Fish for breakfast is something that is more rare in the UK, but it is something that people do all over the world, particularly in the Mediterranean. Having smoked fish with scrambled eggs or salmon, cream cheese, onions, and a bagel can be a quick and easy brunch filling you with plenty of the vitamins and nutrients that you will need. Brunch doesn’t need to be all about avocado, feta, and sourdough; why not add in some fish too?
Breakfast burrito
If you have a love of Mexican food and want something that is easy to eat on the go, then making a breakfast burrito is a good idea. In a wrap, you can put anything that you fancy, such as scrambled eggs, beans, and salsa, or mashed avocado, mushrooms, and tomato. The ingredients can be cooked or prepared ahead of time, and then all you need to do is assemble them in your wrap ready to eat in the morning.
Sourdough toast
Toast is something that is loved by everyone, but if you want to up your game, then choosing sourdough bread is a good idea. It can be topped with traditional ingredients, or you could go for something a little more exciting like mashed avocado and chili. Sourdough is bread that does more for you than a traditional loaf, so should be considered if you fancy toast for breakfast.
