Happy Monday! I’m back with another Meal Planning Monday post. It was good to get our meal plan written down last week. We often write our meal plan on a scrap of paper, take it to the supermarket and lose it in the trolley or in the car and then wonder what we’re having for dinner! Last week was my first week back on my Slimming World plan and it went well, read on to find out how I got on.
I’m trying to reduce how much we spend on food shopping each week. It isn’t always easy when fruit and vegetables are high in demand in our house. Freddie is a fruit-lover and will happily eat 4 or 5 pieces throughout the day. Olly isn’t so bothered about fruit and will happily skip it completely but loves his vegetables with his dinner.
Lots of organisation needed
We have very full cupboards in our kitchen. Mainly because we bought lots of food in December and then illness struck. Olly got the winter sickness bug followed by my husband Greg, which was gross. Then it was Christmas and with us visiting family and friends, we didn’t tend to cook much at all. Therefore we have an abundance of tins and packets to use up with our meals.
A good first week
As I mentioned above, last week was my first full week back on Slimming World. It went well despite me having a takeaway on Saturday night with family and Thursday evening we went to Nando’s for a treat meal for Freddie’s second birthday. I got on the scales on Saturday morning (my weigh in is at 8:30am) and was delighted to see a 4lb loss. Was it beginners luck? I’m pleased as I was really good the rest of the week and limited my snacks and general crap intake! It’s amazing how quickly you can snap back into thinking about what calories are in chocolate and other snacks. I also increased my water intake which is something I have been neglecting so I was happy to drink more.
Meal plans for the week ahead
Using up what we have in the cupboards along with fresh foods in the fridge, I’m pretty sure we can eat well this week and on plan. As we did last week, the boys will probably eat differently to us as they’re fussy monkeys but I will make more family meals where possible. I will also be using my new Pinch Of Nom recipe books for inspiration along with my favourite Slimming World cookbooks too!
Mayflower Chicken Curry with Rice
Chilli Con Carne
Slow Cooker Sausage Casserole
Hot dogs and wedges for the boys / Ham and Egg salad for me with pickles
Chicken Gyros Kebabs, actifry chips and salad
That’s the plan for the meals this week. We don’t have many evening plans this week aside from work and staying out of the storm so we’ll be staying inside, cosy and warm.
