Happy New Year! Hope you all had a wonderful Christmas and New Year. I can’t quite believe how quickly those Christmas holidays went.
As they say, all good things must come to an end and we’re now looking ahead to the year ahead with a fresh focus and renewed motivation. So it’s the first Meal Planning Monday post of the year, the routine is set to begin again in the morning as it’s back to work and pre-school for our family.
Why we meal plan
Meal planning for our family is really important as without a meal plan and food in the cupboards, we are destined to eat rubbish and spend a small fortune that we don’t have this side of Christmas. There’s always the temptation to ring for a takeaway or to pop into the supermarket on the way for bits and this just leads to us spending more money than intended and obviously a takeaway every night isn’t very healthy!
We also meal plan because both my husband and I work during the week and time is very precious when we get home. The time between getting home and going to bed is really limited so whoever is home first begins to cook the meal that we have planned and the other one tidies up and sorts the kitchen out afterwards.
Meal planning is great for making sure you use up all the ingredients lurking in the freezer and then you can buy in any additional bits to complete the meal for the whole family. I hate waste and hate to throw food away so if I can use up meat or any stray vegetable that makes me happy!
This week I’ll be back on track with my Slimming World meals. I took my eye off the ball last year and fell off the wagon with a bump. I’m back on it now without any excuses. I have weight to lose for a medical appointment so have something to focus on.

Slimming World Ready Meal (husband is out for dinner)
I’ve made a good start at stocking the fridge with synfree snacks, I’ve made some scotch broth soup for work lunches, some synfree crustless quiche to nibble on and I’ve also got some chicken drumsticks in the freezer to cook up.
My motto this week is ‘fail to prepare then prepare to fail’ and I don’t want to do that so taking it step by step, one meal at a time.
