I’m sharing this really easy recipe for Leek and Potato soup as I made it this morning and was really impressed. I made it in my new soup maker, I’ve got the Morphy Richards Soupmaker (ad/aff) that I bought with my Christmas money but it would be really easy to make on the hob in a big saucepan if you don’t have one.
I want to make more soups this year as they’re so easy to do, great to take to work for lunch and perfect for those times when I need something quick to eat without reaching for the biscuit tin! What’s even better is that soup is relatively low calorie so perfect for my diet. I’ll be sharing my tried and tested recipes on my blog for you too!
This Leek and Potato soup is synfree as the ingredients are all free with the leeks and onions being a speed food, they’ll help speed up my weightloss!

Ingredients for Leek and Potato Soup
- 1 large Leek
- 1 large Onion
- 2 Potatoes (3 small ones)
- 4 Vegetable stock cubes or 2 Stock Pots
- 1200ml of hot water
- Salt and pepper to season
Method
- Chop up all the vegetables into small pieces
- Place vegetables into the soup maker
- Crumble the stock cubes over the top of the vegetables
- Pour in the hot water
- Season well and stir

I wanted a smooth soup so choose the smooth consistency setting and my soup maker made the soup within 21 minutes. Easy peasy and really delicious!
