We seem to be stockpiling potatoes and veg at the moment but it’s all good because we both like our veg and as long as I weigh out my potato intake it’s diet friendly. Last week we didn’t eat enough and the potatoes ended up growing all sorts of gangly looking limbs so ended up in the compost bin.
This week we’re planning to eat the remaining potatoes with plenty of veg. There is a recurring theme here!
Monday: Lean Pork Steaks with potatoes and vegetables
Tuesday: Just me eating so have bought ingredients for a stir fry (Chicken, box of mixed veg and chow mein sauce)
Wednesday: Chicken Corden Bleu with bacon, with potatoes and vegetables
Thursday: Fish steaks with lemon and herb dressing, with potatoes and vegetables
Friday: Sausage and Mash Pie (WW recipe)
Saturday: Greek style chicken with pitta, chips and salad
All meals are relatively healthy and within my WW points allowance and I’m really looking forward to Saturday nights dinner.
Must tell you about the meal we had on Sunday night because it was quite possibly the yummiest meal I’ve had in a long while. We bought one of those Maggi roasting bags with the seasoning in (Sweet and Sour) and added chicken breasts, chopped pineapple, green and yellow peppers, onions and beansprouts. We served it with basmati rice and it was delicious. The seasoning in the roasting bags are an excellent way of getting big flavours without using many points. We’ll definitely be having it again.
Lunches this week will be ham salads, pasta with sauces and soup.
Breakfasts will be the usual granola, yoghurt and fruit (kiwi, strawberries and grapes) because I really look forward to it and I’m not bored of it yet.
