I haven’t done a meal planning post in such a long time but I’m back to meal planning and hope it will help refocus me as I try to shift some of the extra pounds I’ve gained whilst pregnant and also will help us cope on a reduced budget now I’m on maternity leave.

Meal planning is something we always do every Sunday as we look to the week ahead. We take into account the food and ingredients we have in the cupboards, our commitments during the week and the budget we’re working with.

Over the last nine months, being pregnant hasn’t helped my diet or our meal planning. My pregnancy hormones completely kicked in and I lost my love for fruit and vegetables. I couldn’t stomach chicken for a long time and any fruit or vegetables that were remotely soft or squidgy (melon, strawberries, raspberries and bananas) made me gag! Now that our baby is here and I’m attempting to climb back on the weightloss wagon, I’m hoping our meal plan will help me refocus, get back into the kitchen, make some of our old favourite meals and kick start the weightloss.

I have recently bought the new Slimming World recipe book and hope to make some new meals from the book. There’s some slow cooker meals in there too which I think are perfect for this time of year and for me as time in the kitchen is limited with a new baby.

Here’s what’s on the menu this week

For our evening meals

  • Jacket potatoes with either baked beans or leftover chilli
  • Grilled sausages, mashed potatoes and vegetables
  • Grilled chicken (with Nandos rub), rice and peas
  • Slow cooker beef stew
  • Chicken curry and rice

For my lunches

  • Butternut Squash Soup
  • Scotch Broth
  • Pasta N’Sauce
  • Jacket Potatoes with cheese and beans
  • Salad Sandwiches

So now I’ve written it down, it looks like I need to stick to it. We’ve ordered a food shop to buy in the fresh produce and to add to the existing stuff we’ve got in to make meals. I’m looking forward to getting back into the swing of meal planning and hope it will help both the waistline and the finances this year.
