Synfree Slow Cooker Beef Stew Recipe

We love using our slow cooker at home and this synfree slow cooker beef stew recipe is simple and easy to do and tastes amazing! In the past, we’ve not had much luck with stews in our slow cooker. They’ve always been too watery and the vegetables were very bland but we seem to have hit the jackpot with this beef stew as we made it the other night and it’s beautiful.

Slow cooker beef stew recipe

Ingredients

600g lean stewing beef
1 onion
4 carrots
2 sticks of celery
4 cloves of garlic
500ml of beef stock (I used 2 OXO cubes in 500ml of water)
2 bay leaves
100g borlotti beans (washed and drained)
100g cannellini beans (washed and drained)
1 tablespoon of worcestershire sauce
Frylight (low calorie spray)
salt and pepper to season

Method

  1. Turn the slow cooker onto low
  2. Cut up the beef into small bitesize pieces
  3. Prepare all the veg; chop into bitesize pieces
  4. In a saucepan, stir fry the onions, celery and garlic for 5 minutes until soft
  5. Pour stock into slow cooker
  6. Add all the chopped vegetables and beans to the slow cooker
  7. Brown the beef off in the saucepan to seal it
  8. Transfer the beef to the slow cooker
  9. Add in remaining ingredients; worcestershire sauce, bay leaves, seasoning
  10. Cook on low for 8+ hours
  11. Take the lid off the slow cooker for the last half an hour and turn up to high, this will help thicken up the stock
  12. Enjoy with seasonal vegetables and mashed / boiled potato

Slow cooker beef stew recipe

This is synfree and makes four really good sized portions. Hubby and I enjoyed this for dinner one evening and then hubby took the remaining food for lunches. This easy to do synfree slow cooker beef stew is great for using up the last of the vegetables and sealing the beef off first in a saucepan really gives the beef a good start in the cooking process and tastes delicious.

The added beans in the dish add more protein to the meal and this would be a fab meal for the Extra Easy SP plan (without the added potatoes).
