Another Monday is here and it’s Meal Planning Monday once again. This week I wanted to try some different meals so have taken inspiration from the new Slimming World ‘Mediterranean Magic’ cook book. I was sent it from Slimming World to review and so far I really like it. It’s a mix of recipes inspired from countries surrounding the Med, think France, Spain, Turkey, Northern Africa and Greece to name just a few. There’s some brilliant recipes in there which wouldn’t normally be on our weekly menu so it’s great to introduce some new recipes and meals to the mix.

We’ve got a pretty normal week ahead except I’ve got a date with 3 handsome fellas on Thursday night as I’m off to see Take That with my friend Norma. I’m really excited as I’ve heard good reviews of their gig and they’ll be doing a mix of old and new stuff so I can’t wait!

Anyway back to the meal plan, here’s what’s on the menu this week;

Tortilla Espanola (Spanish Omelette from the new SW book)
Spiced Chicken with Mediterranean Couscous (from the new SW book)
Pollo Alla Cacciatora (Hunters Chicken from the new SW book)
Sucuklu Yumurta (Sausage and Baked Eggs from the SW book)
Slow Cooker Mayflower Chicken Curry with added vegetables and basmati rice

Breakfast at work will be the usual weetabix with fruit, lunches will be salad with boiled eggs, chicken and pickles and I might make up some more spicy butternut squash soup. It’s so tasty, I’ve really enjoyed it and it’s simple to make.

There’s only 4 weight-ins until my friends big day and I’m not sure I’m going to get my stone that I was hoping for. I’m still aiming for it though and hoping for good things so we’ll see. 11.5lb left to go for my mini challenge.

    Oh Wow Emma, that looks like one exotic menu you have for this week. Makes my meals for this week look pants haha. I’m looking forward to hearing what all the meals are like. I’m such a fussy eater and rarely try new things, I really should make more effort, some of those dishes sound amazing. Hope you have a good week lovely xx
