I love preparing a meal for the slow cooker knowing that when I get home from work later that day, the dinner should be ready to serve. This campfire stew is a fantastic winter warming meal that the whole family will love and it is super easy to do. It’s a perfect slow cooker meal for those on Slimming World too as it’s completely synfree. 

We really love gammon in our house so we used a small gammon joint with all visible fat removed. When cooked from the packet, it can taste really salty so we always soak the gammon joint in a bowl full of water overnight to reduce the salty taste. The ingredients for this Campfire Stew meal are really simple but is delicious. 

How to make Campfire Stew

Cook Time: 6 hours
Total Time: 6 hours 10 minutes

A smoky bowl of campfire stew made in the slow cooker. A perfect winter warmer using a small gammon joint, beans and spices.

Ingredients

  • Small gammon or pork joint (all visible fat removed)
  • 1 chopped onion
  • 3 crushed garlic cloves
  • 2 chopped peppers
  • 2 tins of baked beans (normal tin size)
  • 1 teaspoon of chilli powder
  • 1 tablespoon of smoked paprika
  • 6 tablespoons of tomato puree

Instructions

    1. Remove all visible fat from gammon
    2. Chop vegetables and crush garlic
    3. Place all ingredients into the slow cooker
    4. Stir the beans mixture around the joint of meat
    5. Pop the lid on
    6. Cook for 6 hours on low
    7. Remove the gammon and shred into small bitesize pieces.
    8. Return the gammon to the slow cooker and stir
    9. Serve and enjoy!

A great dish to be enjoyed with potatoes and seasonal vegetables or as a topping on a oven baked jacket potato

We have this for dinner regularly as it’s a great versatile dish. It makes 4-6 good sized portions depending on what you serve it with and how you eat it. 

How to serve campfire stew 

Campfire Stew can be enjoyed on it’s own or can be served with potatoes and seasonal vegetables.  It’s delicious as a topping on an oven baked jacket potato.  You could also serve it in a bread roll and have a smoky pulled pork sandwich! 

Other ideas for campfire stew 

Next time, I’m going to use all the same ingredients but add in mushrooms to bulk out the meal to include more than two vegetables. I’m sure you could add any of your favourite vegetables to bulk it out as long as they weren’t too strongly flavoured but perhaps you might like it like that. You could also add other varieties of beans or lentils.

This recipe is synfree on Slimming World and is perfect for Extra Easy SP days as there are no carbs in it at all, just lovely filling speed foods and protein. Yum!

Top tip: If you don’t like the saltiness of the gammon, soak the meat overnight in a bowl of cold water and drain before popping it into the slow cooker. Enjoy!

  10. Hi Mrs Shilts! Quick one – what do you tend to serve this with? I’ve got some in my slow cooker as we speak but am not sure what to pop on to go with it tonight – jacket, wedges, rice?!

  11. Just made it myself for the first time. I’ve added some celery,carrots and,mushrooms. Also a drop of water as it seemed a bit thick before cooking. It’s bubbling away at the moment.
