This easy to make soup is packed full of ingredients which on the Extra Easy Slimming World plan is completely synfree. It’s a very filling soup which is popular for helping to speed up weightloss hence the name, Speed Soup. I made a batch this week and it makes about 6 really good size portions. I had it for lunch at work and found it helped to fill me up for a good few hours.
You will need a couple of large saucepans or a really big pot to cook it all up in. Alternatively, you could buy a soup maker (ad/aff) and reduce the ingredients to make sure the soup maker is big enough to hold all the soup.
Ingredients
2 tins of chopped tomatoes
1 tin of baked beans
1 tin of mixed bean salad
2 stock cubes
2 parsnips
4 carrots
1 mixed peppers
2 leeks
Method
Wash and chop up all the vegetables into chunks
Put everything into a large pan (or two like I had too!)
Cover the veg with just enough water
Boil then simmer until all the vegetables are soft and tender
You can either blend the soup into a beautiful broth or keep it chunky
Add seasoning to taste
Voila, easy Speed Soup!
Enjoy at home
or at work on the go.
The speed soup is definitely one to try and the flavours can be modified with seasoning.
