Preheat the oven to 170C / Gas Mark 3.
Put the butter and sugar into a food mixer and mix together until light and fluffy.
Add the vanilla essence and eggs. Mix together to make a creamy cake batter
Add the flour and mix for approximately 4-5 minutes until smooth. Don't forget to scrape down the sides of the food mixer bowl to ensure all the ingredients mix well together.
Add in a squirt of food colouring (if desired) and mix well
Pour into fairy or cupcake cases.
Bake for about 12-15 minutes but do keep an eye on them to make sure they don't burn
Once baked, they should be springy to the touch. Leave to cool on a cooling rack
Meanwhile, using icing or edible bakers glue, stick on two eyes to a whole Oreo biscuit to form the face
Gently pull apart an Oreo and chop in half to form the bat wings
Colour the frosting if desired, I have used orange and green food colouring
Using buttercream or frosting, swirl it on top of the cooled cupcake
Place the face on first into the buttercream, then firmly add the wings behind the face
Ta, da! Your Halloween Oreo bat cupcake is complete!
