I didn’t get chance to write up last week’s meal planning post. It’s been such a busy few weeks that sometimes something has to give and unfortunately, it was last week’s meal planning post.
This week I’ve managed to book an online supermarket shop and made several lists of things we need throughout the week. Seriously, my life is one big list!
We’ve got another busy week ahead (when aren’t they?) so this week we need to stick to the meal plan and start cooking the dinner as soon as we get home from work. I find if I sit down when I get in, I am so lazy and really don’t want to get up and cook. When I get in early (Mondays and Thursdays) I make sure Olly’s occupied and then crack on in the kitchen. There’s always something to do; unload dishwasher, take rubbish out, sort the washing out etc so if I make a start and then meal prep for dinner, I’m usually much more productive.
I had a bit of a strop last Tuesday as I get in late from work and only have an hour before weigh in. Usually my husband cooks on these nights but for some reason, he didn’t make a start on our dinner and then it was Olly’s bedtime. By the time I got home, just before 9pm, he still hadn’t cooked anything and I couldn’t be bothered to a) start anything myself b) wait 45 minutes for my dinner so I had two pieces of toast. Not SW friendly in the slightest but it stopped my tummy from moaning at me and it was just what I needed.
This week is different. We have a meal plan and I’m not afraid to use it, ha! I’m hoping to make up some crustless quiche and use up the leftover veggies in the fridge. I’m also going to make some soups too for work lunches this week.

Slow Cooker Beef Stew
Sausage, Mash and Vegetables
Bean and Rice Burritos
Slow Cooker Jacket Potatoes with veg chilli for me / tuna and sweetcorn for Shilts
