Meal Planning Monday 9th January 2017

After meal planning for last week, I was so glad to get back into the swing of planning our meals and using up all the fresh ingredients in the fridge. It’s nice to relax the routine over Christmas but we do struggle with getting back to normal in the new year.

Last week’s food went really well. We had some brilliant meals and I popped to Asda to get a few bits (fresh melon and cauliflower rice) to keep me on plan. My lovely husband has made a sterling effort to support me on my weight loss journey and has signed up with Slimming World himself, going to a different meeting to me, but with the same ultimate goals in mind. I’m so proud of him! Hopefully we can support each other and lose lots of weight together too!

This week we did an online food shop for Sunday to make sure we had some fresh ingredients in for the week. We have made a meal plan to work around our commitments in the week and we have some lovely meals planned.

Here’s what we’re eating this week

Slimming World Beef and Bean hotpot bake
Slimming World Chicken Dipiaza and rice (I’ll have cauliflower rice instead of plain rice)
Slow Cooker Beef Stew
Slimming World Chilli Chicken Lettuce wraps and salad
Slow cooker Jacket Potatoes with vegetable chilli for me / cheese and beans for Shilts

There’s a few new meals in there for us. I love trying out new foods. I hate asking Shilts what he wants for dinner to be met with disappointment when we’re trying to decide what to eat. As both of us cook throughout the week, it’s only right that we compromise on meals we both like.

For lunches, I’m planning on making some broccoli and potato soup in the soupmaker (recipe to follow) and also some Scotch Broth for the week ahead. I’ve got some crustless quiche to make as well to use the last of the ingredients in the fridge and they’re tasty synfree snacks too!

I cannot wait to see how the scales fair this week. My first full week back on plan, I have everything crossed that it goes well for both of us!

    Wow – fab dishes there. I too am trying to get healthy but doung it myself. I find slimming world and the likes a quick fix rather than a full lifestyle change.

    Do you have a food processor? Save yourself pennies and get a cauliflower and blitz it for yor rice, I find I get 6-8 portions and just freeze it uncooked and it works a treat!

      I’ve been on Slimming World now for just over 2 years so it’s going well for me so far. I don’t like it that much to be honest, just tried it as a new thing. I think I prefer normal boiled rice :( great idea though!

    Fab meal plan – I love meal planning but fall off the waggon far too easily. So far so good for 2017 though! We are having Quorn tacos for meat free Monday tonight and Goan prawn curry tomorrow – yum!

      Quorn Tacos sound yummy, we don’t have many meat-free dishes to be honest, my husband is a big meat fan! x
