It’s the last Monday of January and time for a Meal Planning Monday post. January seemed to be a really long month but we managed to budget well and we had plenty of food in the cupboards as well as money in the pot for a top up of the fresh fruit and salad to keep us going.
We had a really good week on plan last week, all the meals were cooked as planned and we managed to use a lot of fresh ingredients up which I love doing. I hate to see good food going to waste.
This week we’ve got a pretty normal week with work and pre-school and our usual commitments throughout. We’re going to be using up a lot of the cupboard cans and packets; it’s a pretty basic menu this week but one that we enjoy cooking and eating.
Here’s what’s on the menu this week
Mayflower Curry with Actifry Egg Fried Rice (recipe to follow)
Chill con carne with Boiled Rice
Synfree Spaghetti Bolognese
Slow Cooker Jacket Potatoes with baked beans / cheese and salad
Nandos Chicken Rub, Actifry chips, salad and pickles
Synfree grill up (think sausages, bacon, eggs, tomatoes, mushrooms etc)
Lunches will be homemade soups; brocolli and potato, scotch broth and spicy butternut squash. I’ll also be making lots of crustless quiche for work snacks and we have stuff in to make boiled egg and ham salads too.
I’ll be eating lots of fruit this week to try and get this weight moving. I only lost 1lb last week and having had a sneaky peek (I know I shouldn’t!) but it doesn’t look like a mammoth loss either this week. Grrr!! My hubby is doing well and lost another 4lb last week taking his total to 13lb in 3 weeks. He’s doing so well, I’m quite jealous really!
I’ve got a new water bottle which has already, in two days, helped me drink lots more water. It’s a Hydratem8 bottle which holds 30 fl oz (887ml) so drinking 3 bottles every day means I’m drinking just over 2.5 litres of water which is great for flushing out the system!
