Meal Planning Monday 1x3

It’s Monday and time for my regular Meal Planning Monday post. It’s another week in work and pre-school for us, we’re hoping this week goes a bit more smoothly than it did last week. We’ve changed our morning routine up a bit and so far so good, we’re all eating breakfast before leaving the house and trying to get a little bit more organised (remembering lunch, taking a bottle of water with us to work and prepping dinner or getting meat out of the freezer.)

Last week was a brilliant week on plan for me. I lost 7lb at weigh in and my husband lost 5lb at his. It’s really helping me having him following the plan too. I feel so much more supported when he’s not scoffing biscuits in bed. He’s doing so well and I’m very proud of him for making the decision to lose weight for our future.

We’re hoping for another great week on plan and have meal planned for the week ahead. We have plenty of chicken in the freezer so we’ll be using that up and cooking up some batch portions of soup for lunches and the freezer.

Here’s what’s on the meal plan this week

Porky Light Sausages (0.5 syn each) served with Mashed Potato and Vegetables
SW Burgers with Sweet Potato Wedges and Salad
SW Spaghetti Bolognese
SW Ready Meals (Working late and not much time to cook a meal)
SW Chicken Curry and Boiled Rice
Pulled pork, sweet potato wedges and coleslaw

With the weather being so rubbish lately, we’ve wanted comfort food to keep us warm. We’ve got a brilliant soup maker which we love to use and we’ve made some delicious soups in it. This week we’re trying a green soup (kale, broccoli and peas) spicy butternut squash and leek and potato. If they work out, I’ll blog the recipes.

    Ooh a soup maker sounds amazing! I cooked a massive moussaka last night and it will be fine for tonight and tomorrow night as well. Love it when I don’t have to cook every night! Well done with your weight loss, you’re a real inspiration.

      We love our soup maker, it’s so handy! Moussaka sounds delicious, we’d take it to work for lunches if there’s any leftovers. Thanks lovely x

    would love to know how you do the pulled Pork ..sounds great..with sweet Potato + coleslaw??? And would luv to know how you do your soups..the Butternut Squash + leeks etc..sound lovely..(after..what I feel is my Asda..ready to eat…Butternut Squash, with salad etc..dare not eat the Chicken one I got for tomorrows lunch..unless I hear from you that its ok..all details of all this.. on you private message bit on F/B..so getting soo depressed over this not understanding about all this food etc..+ just do not want to keep asking the woman who runs my club the same questions over + over..thats when I end up giving up..never ever had a weight prob. till giving up the dreaded..cigs!!! Even after having 3 children,,way back in the 80’s..no slimming clubs then..nevedr needed them..back to 8+-9st. within a mth!!! Not like that now!!!..But I do go on u-tube..+ blast out my favourite Joan Jett + the Blackhearts, great amazing Rock’n’Roll music..dance around myy bedroom..PHEW!!! Dogs think I really have …’lost it’!!! lol.. So hope to hear..ASAP…
