I haven’t done a Meal Planning Monday post for ages and that’s not for the lack of planning, it’s just I’ve always ran out of time on a Sunday to get the post up for a Monday. We have still been planning our meals, doing the food shop on a Sunday and attempting to get organised for the week ahead, it’s routine for us now.
This week it’s another busy week (when aren’t they?) with lots going on after work and throughout the week. We have our usual commitments too so we’ve done a quick meal plan to combine some of our favourites against the time we have in the house to cook.
Here’s what’s on the meal planning menu this week;
- Lemon and Herb Chicken with sweet potato wedges, carrots and broccoli
- Slow cooker Pulled Pork (or campfire stew) with rice and salad
- Slow cooker jacket potatoes with a filling of choice (mine will be multi-bean chilli, my husband will have tuna and sweetcorn and Olly will have cheese)
- Slimming World Chilli Con Carne with boiled rice
I’ve made a big batch of broccoli and potato soup for our lunches at work this week. I love my soup maker. It literally takes a couple of minutes to peel and chop the vegetables then throw it into the soup maker and set it to make a smooth soup. My soup maker takes 21 minutes to make a smooth soup so it’s very quick and easy. Perfect for nights where you want to get ahead for the week but don’t have much time.
I’ve also chopped up a melon and will be having sliced melon for breakfasts this week and bought some frozen berries instead of fresh ones as there seems to be big shortage of fresh berries at the moment, I’m guessing they’re seasonal. Frozen berries are a lot cheaper too which is great for the food budget.
We’re busy at the weekend so we’ll be grabbing what food we can in the house for lunch and dinners; possibly omelette or a mixed grill up using up the bacon in the freezer, beans in the cupboard and mushrooms in the fridge.
