What to eat on Slimming World Extra Easy plan

You know, it’s amazing what you can do when you put your mind to something. Last week I wrote about my infertility struggles and how determined I was feeling to lose the holiday weight (and then some). I’ve been very determined this week and followed the SW plan to the letter with every day being totally on plan, so was delighted to see at weigh in on Tuesday evening that I had a whopping 7.5lb in just one week!

I’ve had quite a few comments and messages asking me what I ate during the week so I thought it might be a good idea to write up my food diary for the week as a record of what I had. All my meals are posted over on my instagram feed so if you want to see photos head on over for a nosy.

Day One


Breakfast: 35g Fruit and Fibre (hexb) with a splash of milk, strawberries, blackberries and melon
Lunch: Leftover Szechuan pork with noodles and lettuce
Dinner: Nandos butterfly chicken breast lemon and herb with skin removed (3 syns) with spicy rice (2 syns) and corn on the cob
Other syns: Hi-fi bar (3 syns)

Day Two


Breakfast: Mixed fruit salad (strawberries, blackberries, blueberries, melon, pineapple, mango and grapes)
Lunch: Slimming World chicken and chorizo style sausage paella ready meal with lettuce
Dinner: Slimming World chimcurri burgers with ketchup (2 syns) wholemeal bread roll (hexb) and mixed salad
Other syns: Hi-fi bar (3 syns) Fibre One bar (4 syns)

Day Three


Breakfast: 35g Fruit and Fibre (hexb) with a splash of milk, strawberries and pear
Lunch Slimming World Pea and Mint soup with lettuce, tomatoes, chopped ham and cucumber with apple
Dinner: Rice and Bean Burritos
Other syns: Fibre One bar (4 syns) Freddo (5 syns) Kinder bar (3.5 syns) Hi-fi bar (3 syns)

Day Four

Breakfast: Bacon and Egg Bap (hexb) with HP sauce (1 syn) and mug of tea
Lunch: Plain jacket potato with baked beans and pulled ham, cup of coffee
Dinner: Beef and Bean Hotpot (0.5 syn)
Other syns: Kinder bar x 2 (7 syns) Freddo (5 syns)

Day Five

Breakfast: Bacon and Egg roll (hexb) with HP sauce (1 syn) with a mug of tea, chopped peach, strawberries and blueberries
Lunch: Prawn cocktail with thousand island sauce (2 syns)
Dinner: Roast chicken dinner with slimming world roast potatoes and vegetables
Other syns: Hula Hoops (5.5 syns) Kinder bars x2 (7 syns)

Day Six

Breakfast: 35g Fruit and Fibre (hexb) with a splash of milk, mixed berries (redcurrants, blackcurrants, raspberries and blackberries with a mug of tea
Lunch: Pulled ham salad with honey and mustard dressing (2 syns)
Dinner: Diet coke chicken with savoury rice
Other syns: Hi-fi bar (3 syns) Golden Hoops (5.5 syns)

Day Seven

Breakfast: Overnight oats (35g porridge oats = hexb) layered with an Activia yogurt and frozen mixed berries
Lunch: Pulled pork salad with fat free vinigarette
Dinner: Slimming World burgers (2 syns for ketchup) with a wholemeal roll (6 syns) with actifry chips and leaves
Other syns: Hi-fi bar (3 syns) Golden Hoops (5.5 syns) Kinder bar (3.5 syns)

As weeks go, it was a pretty good one. I drank plenty of water and squash and mainly used my daily Healthy A allowance for milk which I used in my cereal or in my tea / coffee throughout the day. I also wrote down all my meals in my Slimming World food diary and this helped me remember what I had eaten (I’ve been completely guilty of forgetting that I had eaten something with a syn value and then over eaten) so it’s always worthwhile keeping a record. As you can see, I ate well throughout the week and even had chips!
