Meal planning for us is a regular thing now. It’s part of our routine and something we do on a weekend which sets up our week ahead. We sit down with the notepad, a couple of recipe books and the latest Slimming World magazine and plan the meals for the week ahead.
Last week we had a brilliant week on plan. We prepped, cooked and ate all the meals we had planned for and it felt really good for getting back on plan. The chicken kiev we made was really delicious and i’m already hankering after it again. I’m not sure if anyone noticed on social media but I weighed in at SW on Tuesday night and gained a massive 12.5lb. I’m okay with that given I was on holiday for 2 weeks and had all inclusive food and drink for 7 days! Live and let live and get back on track when you can..
This week I’m focused for another good week. I’m hoping I’ll have lost some of the excess weight when I weigh in tomorrow evening (keep everything crossed) and we’ve meal planned for the evenings up until Thursday. On Friday I go to London for the Britmums conference with Boots Soltan and I’m really looking forward to it. I’ll try my best with the food and drink but it won’t be SW friendly, I expect! On Sunday, I’m off to afternoon tea for my friends birthday so will have to limit the cake their too!
Here’s what’s on the menu in our house this week
- Egg fried rice with teriyaki chicken (SW recipe from the latest magazine)
- Slow cooker jacket potatoes with tuna and mayo for the boys and beans and cheese for me
- Diet coke chicken with savoury rice
- Zesty Heck chicken burgers with actifry wedges and salad
I fully expect the boys to indulge in takeaways and pizza at the weekend whilst I’m away. I don’t blame them really as when I’m at home, they don’t have it in front of me. Whilst the cats away and all that!
