As they say, all good things must come to an end and as you may have seen on social media, my family and I have just come back from a fantastic week’s holiday on the gorgeous sunshine island of Fuerteventura. I’ll be writing up what we got up to on holiday with our highlights but for now, it’s time to get back on track and ready for getting back to our usual weeks at work and playing hard at the weekend.
Both Greg and I have indulged quite a bit on holiday and the scales are tipping a little more in the direction of ‘fatty’ than I would like so it’s back on it with our meal planning and trying to get my head back into SW mode! Yesterday, we sat down and wrote a meal plan for the week ahead and went shopping for the fresh produce. We love fresh fruit and I eat a lot of salad so usually end up spending quite a bit on that each week. We’ve tried frozen fruits but they’ve always ended up being too soggy.
With the weather here in the UK a little cooler than Fuerteventura but still nice when the sunshine comes out, we’ll be enjoying quite a few fresh meals this week as I have a renewed focus on getting the holiday gain off and really making a difference between now and Christmas.
Here’s what is on the menu for us this week…
Heck Zesty Chicken burgers with cous cous and salad
Grilled Chicken with caeser salad
Szechuan Pork with noodles
Fish Chargrills with new potatoes and vegetables
SW Chicken Kievs, rice and salad
SW Cheese and bacon burgers with Actifry wedges and salad
SW Chicken Curry and boiled rice
We’re using some of the recipes from our favourite Slimming World recipe books which is where I find a lot of inspiration for our meal plans from. If we ever feel a little demotivated with weight loss, I just need to look in the magazines and recipe books for meal ideas and I feel much better knowing we can enjoy delicious food on plan.
I’ll be trying out new meal ideas when we’ve got back in to the swing of being at work, seriously whoever invented Mondays?! I hate Mondays!
