Happy first day of Spring! We saw a glimpse of sunshine today which was lovely but unfortunately it didn’t stay around for very long. Seeing the sunshine changes my tastes in food, I always think winter and autumn are for warming comfort foods; stews and soups and making the most out of the slow cooker. Spring and Summer are for fresh and zingy foods like salads and stir frys.
We’re so looking forward to the Easter break next weekend. I cannot wait for a few days off and spend some time away from the laptop getting some fresh air and having some quality time with my boys.
It’s business as usual this week apart from Friday so here’s what’s on the menu for our evening meals this week in our kitchen
Lunches this week with be homemade leek and potato soup and salads packed with pickles, boiled eggs and chopped ham.
Breakfasts will be the usual; chopped fruit and Activia 0% yogurts with a hi-fi bar, Fruit and Fibre with fruit or Weetabix with fruit and a splash of milk.
We did really well with our food planning last week, we ate everything we had planned too and used up loads of produce from the fridge and freezer. I love it when that happens as I feel like we made the most of the budget and we ate well.
