Meal Planning Sunday 10/2016

It has been a bit of a whirlwind week. Sometimes life just gets in the way and you have to decide what is most important for that day and just do it. Last week my lovely Mom was taken to A&E with breathing difficulties and I made a mad dash last Sunday night to the hospital to be with her and my Dad. She was really poorly and has since been in hospital with Pneumonia. Thankfully she’s feeling much better and with fingers crossed, will be able to come home at some point this week, hopefully tomorrow. Seeing her so poorly was frightening and really puts life into perspective.

This week we’ve done our food shop and in tradition of Meal Planning Sunday, we’ve planned some meals to stay on track with the diet. Hubby wrote recently about starting a new health kick and he’s doing really well. He’s following the SW plan and has been writing everything down, checking the syn values of food and has cut out loads of things. He lost 7.5lb in his first week which he was delighted with and he’s on track for another great week ahead.

With today being Mothers Day, I decided that we needed to get the slow cooker out and make use of the ingredients in the fridge. I really enjoy campfire stew but it’s not one of my hubby’s favourite meals however, as he was looking after Olly and my nephew whilst my Sister and I went to see my Mom in hospital, he didn’t really want to be cooking something else in the kitchen. I really enjoyed it for dinner as did my Sister so it’s a great way of getting a meal ready with minimal effort.

The week ahead is a busy one as usual so we’ve meal planned to make sure we eat properly and can stay on track. Here’s what’s on the menu this week..

Chicken Jambalaya
Steak, SW chips and salad
Slow cooker Jacket Potato with SW Chilli Con Carne
SW Chicken Chow Mein
SW Full English Breakfast

For lunches, we are still utilising the soup maker and have made a batch of Leek and Potato Soup for work lunches with Sweet Potato and Butternut Squash soup also on the menu for later this week.

I don’t feel like I’ve been on plan 100% this week so not sure what the scales will say on Tuesday but I’m hoping for a loss whatever that may be!

    What a great variety of meals you’ve got on your menu! I always have to meal plan else I buy a load of rubbish x
