The best meal planning weeks are ones where I hand over the several cookbooks to my hubby and get him to choose the meals for the week. We sometimes slip into our weekly routines so well that we don’t mix up our meal plans and they can get repetitive and a bit samey and my hubby gets a bit fed up of my suggestions so it’s easier to let him do the hard but and plan our weeks meals.
This weeks a busy one in our house with the usual evening activities on as usual (Darts / Slimming World class) but throw in a Parents Evening (Hubby’s a Teacher) and a lads night of Poker and it’s sure to be a busy one with meals needed to be prepared and cooked within an hour so no-ones late or is tempted to eat a chippy tea.
Here’s what’s on the menu in our house this week;
Chicken Souvlaki with rice and salad
Gammon, eggs and actifry wedges
Thai chicken cakes and rice
Seared turkey, potato and vegetables
Burger in a bowl
Lunches for me this week will be ham salads with pickles and spicy butternut squash soup.
Breakfasts will be either yogurt and fruit with post grape nuts or a bowl of fruit and fibre or a weetabix with added fruit.
Although my diet hasn’t been particularly rubbish of late, I’ve not had much success on the scales and really want to see if I can drop another couple of stone by Christmas. I’m not sure how I did it last year as it’s not coming off as easily as it did last year but it just makes the challenge more exciting!
