As many of you know I’ve been following the Slimming World plan for just over a year now using the food optimising techniques day in and day out to help me with my weight loss. When I heard they had a new book out I was excited, I love reading new recipe books as we love to try out new meals to escape getting into a rut of eating the same things each week. The new Slimming World Veggie Deluxe book is packed full of over 50 vegetarian recipes with comforting classics to nice ‘n’ spicy dishes.
I’m not a vegetarian but I like to try out new recipes and every meal we have doesn’t have to include meat (although if hubby had his way we would have meat every time!) so I was interested to have a nose through the book and pick a few recipes to try out.
I picked a couple of recipes to try out; Ricotta and spinach crepes with basil and tomato sauce and Multi-bean chilli.
Ricotta and Spinach Crepes
The recipe was relatively easy to follow and I was so surprised at how well my crepes came out. I am useless at making omelettes so was a bit worried but they were amazing and I have since gone on to make them for Little Mr who loves them as part of his dinner.
As I was only making the dish for me and hubby I halved the ingredients for the recipe but unfortunately this affected the sauce that was supposed to line the base of the bowl. Instead of getting disheartened, I made the sauce into a thick dipping sauce and we had the sauce to serve on the side of the crepes.
I really loved this recipe. It was time consuming to put all the elements together so it does take the amount of time stated in the book but it was worth it as we all really enjoyed the meal.
I do love a good chilli and I also love beans so I couldn’t wait to try this recipe out. It’s such a good recipe and would be brilliant for a quick meal to batch cook to keep handy for the winter months. The recipe was easy to follow and the chilli tasted really good.
We made a huge batch of the multi-bean chilli and it made four really good sized portions. I warmed up a portion the next day to eat at work for lunch and I’m sure it was even better than the night before. It was so thick and warming and the flavours came out really well. I’m definitely making this again.
There are lots more recipes that I can’t wait to try out and have my eye on Bean and Rice Burritos and Mozzarella and Chilli Pasta Bake to make in the not so distant future.
The Veggie Deluxe recipe book is priced at just £4.95 which is unbelievable value considering you get colour pictures for all the recipes and full instructions. I also love the cook’s tips at the back of the book which have been really useful. I’d definitely recommend this book to anyone who fancies cooking up something new in their kitchen and making the most of all the lovely vegetables out there.
