I’m back! Although we’ve been meal planning over the summer holidays, I took some time off writing it all down as there was so much going on something had to give.
Today we’re back to the usual routine of work and Little Mr going to his Grandparents throughout the days during the week so we wanted to make sure we had a meal plan in place as we all know how hectic life can be after work with trying to think about what to have for dinner, did we get the meat out in time, can we be bothered to cook? All of which we were guilty of previously (pre-Slimming World)
I handed over the reigns of the meal planning to hubby this week as some of the meal ideas I was coming up with didn’t meet with his approval. As we share the cooking responsibilities during the week, it was time for him to make some decisions and to be honest, I was more than happy for him to take charge.
Here’s what’s on the menu in our house this week;
- Beef hotpot
- Spicy chicken curry
- Seared chicken
- Beef and mixed bean chilli
- Diet coke chicken
- Thai green curry with rice
I’m rather impressed with the meal choices as they’re all recipes taken from my stash of Slimming World cook books meaning that we’ll both be happy with our meals this week. They’ll be delicious and low in fat, win win!
Breakfasts this week will be the usual variety of ‘eat at my desk’ meals; Weetabix yogurt, Fruit and Fibre all with additional fruit to boost the speed foods intake.
Lunches will be probably be leftovers from our evening meals and my usual salads with ham and pickles.
I seem to be dreading the return to work more than usual at the moment which is ridiculous considering I’ve been back at work for the last 3 weeks. I guess it’s the reluctance to accept the Autumn is on it’s way and the nights will soon be drawing in. Boo!!
