Although it’s the Summer holidays here, we’re very much on plan with our meal planning. I’ve written before that we can’t just wing it anymore as it affects both our budget and my diet, so even though the days may be unplanned (for hubby and Little Mr) our evening meals are still planned in advance so we can stay on track.
There’s just one week left for me at work until I get two whole weeks off with my boys and I literally cannot wait! We’ve done a smaller food shop this weekend as we have planned the meals around some of the contents in the freezer so this is what we’ll be enjoying this week.
Chicken Tikka Massala with rice (for hubby) and vegetables (for me)
Grilled Chicken Skewers with Peppers, Mushrooms and Onions with rice and salad
A healthy ‘grill’ up (bacon, scrambled eggs, sausages, baked beans, mushrooms)
Chilli Meatballs and savoury rice
Sausage and Mash / Gammon and Actifry Potato Cubes
Hubby is in charge of what Little Mr will be eating this week so they’ll probably both have sandwiches and snacks for lunch whereas I’ll be having ham salads and crustless quiche. We had quite an indulgent weekend food wise (check out my hotel reviews in the week) so I’m really hoping I can pull it back for weigh in this week and bag that award. Fingers crossed for me please!
There will be no Meal Planning Monday post from me next week as I’ll be taking some time away from the blog whilst we’re away on our holidays but keep an eye on my instagram to see what we’re getting up too!
