Just a short meal planning post from me this week. The school holidays are here and although my hubby is in work today, he’ll be off to enjoy the summer holidays with Little Mr as his sidekick. Gone are the days when he can stay in bed and have a lie in, he’ll be enjoying some quality time with Little Mr having the time of his life. I’m still in work for the next couple of weeks then I have two whole weeks off. I cannot wait!
We’ve got a couple of nights away this week as we’ve been invited back to Chesford Grange again, so we’re super excited to take Little Mr back and let him explore the grounds. It’ll be good to see how the hotel looks after toddlers as opposed to babies (he was only 18 months old when we went last year.) This obviously means that we’re eating out at the hotel so that’s a couple of meals less than we need to plan. Good job really as we are at the very thin end of our budget this month with their being 5 weeks to our month!
Here’s what we’re eating this week;
Boys: Sausage and mash with vegetables / Me: Chicken Chow Mein Stir Fry
Gammon, summer salsa and actifry wedges
Omelettes packed with onions, peppers, mushrooms and baked beans
Green Thai Curry with boiled rice
For my work lunches, I’ll be taking my usual chicken and pickle salads and for breakfast, I have a huge box of Fruit & Fibre to get through with fruit.
I’m hoping to cook up some veggie delights as I’ve been sent the latest recipe book from Slimming World. It looks like a fabulous book full of recipes perfect for vegetarians and vegans so hopefully my hubby will like some of the recipes (he’s a big meat eater!) I have my eye on the potato hash and fried egg, portabello mushroom cheeseburgers and the broccoli and parmesan souffle. They all sound delicious don’t they?
