After what has been a fantastic weekend full of yummy food at our friends wedding with more wine than I could actually consume, an epic hotel breakfast and sunshine that just demands you to enjoy an ice cream, I’ll be glad to see some normality on the menu before I put on another ten pounds.
It’s a normal week for us at home this week, usual commitments in the evenings so our Monday to Thursday is pretty standard. We’ve planned the menu for the week ahead with some yummy foods included. We had an amazing dinner yesterday evening of griddled gammon with summer salsa, it was so nice especially with the warm weather we’ve been able to enjoy.
Here’s what we’re eating this week;
Golden Chicken Skewers with a chunky salad
Faggots, mashed potato and vegetables for the boys and SW meatballs for me
Chilli Burgers with sweet potato / butternut squash wedges and salad
Sausage, mashed potatoes and vegetables
Slow cooker mayflower chicken curry
Omelettes with ham and cheese for the boys, onion, peppers and mushrooms for me
For lunches I’ll be having my usual salads with boiled eggs and pickles. I love, love, love pickled onions, I cannot get enough of them at the moment! My breakfasts will be a variety of weetabix and fruit, crunchy bran with fruit or Fruit N Fibre.
I need to get my head back in to the diet this week. I fear I’ll have a gain on Tuesday evening but hey, it was worth it! Watch out for my outfit post later this week as I felt so confident in it which was an amazing feeling.
