I do love meal planning as it sets me us up for the week. We know what meals we can eat, it really helps me stay on track with my slimming world diet and we know that as there’s fresh food in the house, it needs to be used up. No wasting money by throwing food away or letting it go off as we couldn’t be bothered to use it up.
Even though we meal plan, we are still guilty of buying stuff that we don’t need in and the cupboards are fit to bursting with tins of baked beans, chopped tomatoes and stock cubes. Although if you put it all together, we haven’t actually got anything that goes together to make a decent healthy meal.
This week we decided to check the contents of the cupboards again to make sure we didn’t buy anything that we already had in and needs using up and we’ve taken a look at the weather forecast (it’s supposed to be a warm week ahead!) and planned some meals that we think we would like to eat this week.
Here’s what is on the menu this week;
Meatballs, Potato rosti and vegetables (SW burgers and salad for me)
Grilled chicken with Nando’s rub, savoury rice and salad
Bacon and Sausage grill up (healthier version of a fry up)
Chicken Veg kebabs with Actifry potato cubes and salad
There’s only 4 meals for us this week as we’re away in Yorkshire for the weekend. It’s somewhere we have wanted to visit for a long time so when a hotel review landed in my inbox, we jumped at the chance. We’ll be eating on our travels Friday evening and going to a Beefeater for dinner on Saturday evening with Sunday being spent in Manchester seeing my gorgeous friends and meeting another gorgeous newborn.
Breakfasts this week will be scan bran cake (click here for the recipe), fruit and yoghurt, Weetabix with fruit and crunchy bran with fruit. I am loving strawberries at the moment and really enjoying them. It’s a good job they’re a speed food on SW.
Lunches will be my usual pickle salads with my homemade Summer Salsa (click here for the recipe) with either cooked chicken or ham and cold boiled eggs.
Hubby usually takes sandwiches to work or a sneaky Morrisons salad bar box full of weird and wonderful foodstuffs. I love that you can get a box of salad bits from the supermarket without buying all the ingredients in their usual quantities. I know they’re expensive but I am not going to argue with my husband enjoying a salad once in a while!
I’m hoping for a good week this week, last week was tiring but with only 3 weeks left of the school term, it’s all getting a little bit exciting (for hubby anyway!)
