Monday again. For the records, I hate Mondays. For me, it signifies a long week ahead at work, well it’s only four days but that’s long enough, countdown to the weekend has begun.

Hubby breaks up from work on Friday for half term so he cannot wait to have a week off work and to spend some time with Little Mr recharging his batteries. I haven’t got half term off but I will only be working two days that week so it’s not all bad!

We had a good food week last week and managed to use up pretty much all the fresh produce and also use up some of the freezer stocks.

My favourite quick meal is now chicken stir fry using frozen stir fry vegetables, it’s so tasty and only takes about 15 minutes, what a winner! I’ll be sharing my thoughts on the new recipes we tried last week as they were all delicious and we’ll definitely be trying them again soon.

Here’s what’s on the menu this week at the Shilton household;

* Sausage, mash and veg (I’ll have SW sausages and salad)
* Slow Cooker Mayflower Curry with basmati rice
* Grilled chicken skewers with peppers, mushrooms and onion, served with salad
* SW Burgers and sweet potato wedges (hopefully I’m going to try and incorporate a light Babybel into the burger which will ooze out the middle, fingers crossed it’ll work!)
* Slow Cooker Mushy Pea Curry

I’m desperately sticking to my diet this week in the hope to shift a few pounds. My weight loss has really suffered since I put on weight at Easter and although the Easter gain has now gone, the rest is not shifting quickly enough for my liking, especially as I have at least another five stone to lose!

Breakfasts will be Fruit and Fibre with fruit or Weetabix with Fruit. Lunches will be either chicken salad with pickles or chilli butternut squash soup which is so easy to make and really filling.

    Mayflower curry looks delicious (off to look for the recipe). I made the burgers with babybel on Saturday and they were amazing although mine were not slimming world friendly.

    Oooh, bangers & mash! Yummy! Even the SW sausages and salad sounds nice though.

    Happy #mealplanmonday! The worst part about Monday for me is the children going back to school after lovely weekends.
