Happy Bank Holiday Monday (to those of you in England, Wales and N.Ireland)
We haven’t actually planned this weeks meals as we didn’t get to the supermarket yesterday to do our usual food shop but I’m hoping we’ll be able to get to the supermarket later on today. This week hubby is still on his Easter holidays from School so he’ll be looking after Little Mr whilst I’m back at work on Tuesday. They’re going to have a blast together and I am stupidly jealous that I have to go to work and miss out on the fun.
I was sent a new recipe book from Slimming World before the weekend and it looks brilliant. The SW Mediterranean Magic recipe book is out in groups from today, 6th April, and features all the favourites from holiday hotspots. I’ve got my eye on a few recipes including spiced feta fritters with tzatziki, pork souvlaki and potato, chive and parsnip latkes. The recipes look fantastic for a Summer on plan whilst I dream of being on holiday in the sunshine!
The meals I’m hoping we can have this week include;
Lemon and garlic chicken with rice and vegetables (salad for me)
Coq Au Vin with herby mash
Chicken stir fry
Meatballs with a rich tomato sauce
Beef and mushroom stroganoff
Breakfasts will all be on plan as usual; weetabix with fruit, yoghurt with fruit and All Bran or porridge and fruit. Lunch at work will be my favourite chicken/ham salad with pickles and if I get chance I’ll be making some crustless quiche to make my lunches stretch further.
If you’ve been following me on instagram this weekend, I’ve been a little bit naughty and off plan. The lure of chocolate, pizza and a McFlurry got the better of me and I’m expecting a gain on the scales. I’m back on plan from today with damage limitation but I had a fabulous weekend and sometimes you just have to have what you want even if it is off plan.
I’ve just realised I still haven’t defrosted the fridge/freezer as I had planned. Where does the time go when you’re having fun? It will wait I was having time with my family!
