Meal Planning Monday 13th April 2015

It’s back to work for us today after hubby has enjoyed his two weeks at home over the Easter holiday. Back to the daily grind, the early mornings and back to our usual routine of planning our evening meals around our evening commitments.

I always feel quite rushed when we get home from work. We seem to rush in the door, quickly put the oven on and sort out Little Mr’s dinner then start preparing our own meal. Little Mr often does have a different meal to us as ours take longer to cook than his. I’d love to have the time to make us all the same meal but in reality it just doesn’t happen. We often save some of our meal from the night before for him to have for dinner (if he’ll eat it, he can be a bit fussy!)

Here’s what is on the dinner menu this week for our Meal Planning Monday round up…

Burger in a bowl with salad
Sausage and mash with vegetables
Nandos peri-peri chicken, savoury rice and vegetables
BBQ pulled pork (new SW slow cooker recipe to try out)
Baked cannelloni (new SW recipe to try out)
SW burgers, SW chips and salad

There’s a mix of meat in there this week, we don’t have much red meat as a rule but we do like to have it once a week if we have the budget. Why is meat so expensive? I know we could have a meal without meat but my hubby is quite traditional and won’t eat baked beans on toast for dinner. I’d quite happily eat that if I’m honest!

For lunches this week, hubby will be taking sandwiches or left over dinner from the evening before. I’ll be having my fabulous chicken or ham salads with pickles and boiled eggs. I love the variety of flavours from the pickles and it means I don’t need to have a sauce which would be extra syns. I do love a good pickled onion or two!

Breakfasts will be eaten at work so the usual weetabix with milk and fruit, yoghurt and fruit with all bran or layered oats and fruit. I love my Fridays off work as I get to spend the day with Little Mr. No rushing around (usually) and I can have a cooked breakfast. Love bacon, scrambled egg, baked beans, mushrooms and chopped tomatoes. Keeps me full for ages.

I’m hoping to see a good loss on the scales this week after my humongous gain last week. Please keep your fingers crossed for me!

    I keep meaning to do the burger in a bowl, but never seem to remember! May replace my bolognese with it, tomorrow, if the weather is nice x

    Meat can be so expensive, we get ours at the butchers now which actually works out cheaper most of the time.Have a great week x

    Ooh BBQ pulled pork, that’s got my mouth watering. Baked cannelloni also sounds delicious, as does it all, to be honest! Hope your week doesn’t feel too manic after the hols xx

    I think i need to get in on this meal planning lark, it seems to work really well for everyone. Think it would cut our weekly food shop bill down too! Your food always looks so yummy Em! xxx
