Woohoo! Hello Easter holidays, lazy mornings and days full of family time. Both my hubby and I are off work (I’ve got this week off and hubby has two whole weeks to enjoy… the only perk of being a Teacher!) so we get to spend some quality time with Little Mr and play puzzles, play outside in the garden and have some ‘us’ time.
Last week we had a purge on the contents of our freezer and we used up leftovers. This week we have time to make meals without rushing them and we can even make them early enough to sit with Little Mr and eat a meal together, we don’t often get the chance to do that in the weeks when we’re at work.
We have a few things planned this week, a couple of days out planned, some house chores that we’ve been putting off and a weekend in London to look forward to so hopefully it’s going to be a fab week ahead.
Here’s the meals we’ve got planned this week…
Diet coke chicken with rice and salad
Beef Bourgignon with swede mash and vegetables
Caribbean Pepperpot Stew with rice
Sausage, Mash with red onion gravy and vegetables
Lunches will be homemade sandwiches for the boys, I’ll be having chicken or ham salads with my usual boiled eggs and pickles. I can’t get enough of pickles at the moment. They’re synfree and I’ve always been a fan of them. Apparently when I was in Nursery, many moons ago, I would have lemon curd and pickled onion sandwiches and absolutely loved them. Granted they sound awful so don’t think I’ll be trying that combo any time soon!
Breakfasts this week will be a bit more varied than when I am at work. I’ll be enjoying baked oats with fruit, a cooked breakfast and I might even have a piece of toast or two with some baked beans and poached eggs. Diet, what diet?
