Sunday is the day when we meal plan and prepare for the week ahead. We write a list of all the appointments or events coming up in the week and we plan meals around them. Monday is the day it all kicks off and this week is pretty much a usual week for us with darts for hubby and Slimming World group for me. Except our beautiful Little Mr celebrates his second birthday on Tuesday and when asking him what he wanted for dinner that evening, he has asked for Pizza. He loves pizza so we’re going to buy in a take away pizza and let him enjoy it with a couple of sides of wedges and chicken goujons. I’ll be saving one or two slices for post weigh in, of course!
Here’s what we have planned this week with a couple of new recipes added into the mix.
Butternut Squash, Sweet Potato, and Bacon Stew
SW Mexican Chicken Fajitas and salad (new recipe)
Caribbean Beef Pepper Pot Stew and Rice (new recipe)
Lancashire Hotpot (made with beef as I don’t like lamb!)
Faggots, Mash and Vegetables for the boys and Campfire Stew from the freezer for me
I’ve made soup for my lunch at work and although time wasn’t on my side today, I haven’t been able to make my synfree crustless quiche but hope to get them into the oven tomorrow evening for the rest of the week.
I’m hoping for a loss this week on the scales so need to be as good as possible with plenty of Free and Speed foods to help me achieve this. Breakfasts will be fruit, yoghurt and All Bran or weetabix or possibly porridge as I am really enjoying the new Oat So Simple Multi Grain sachets, made with milk and water they count as a HExB choice so totally on plan with added fruit.
