The first Meal Planning Monday post of February and I’m hoping it’s going to be a good month. I’ve got good hopes for this month as there’s lots of things planned including Little Mr’s 2nd birthday, a mini break away to Wales and my friends hen do in London and amongst all that I’m hoping to stay as on plan as possible.
This week we have a relatively quiet week planned. Both hubby and I are working and we’re seeing friends on Friday after another nursery settling in session then next weekend we are hoping to visit our local Safari Park with Little Mr to celebrate his birthday a few days early. We’re going to have a small family tea party next Sunday with our Parents and siblings and I’m hopefully going to bake a 2nd birthday cake for him with his favourite Disney Cars characters on top. I hope I can pull it off.
Here’s what we have planned this week;
Slow Cooker Beef Stew
Tandoori Chicken with rice and salad
Pork and Mango Noodles (a new recipe we’re trying out this week)
Beef and Mushroom Stroganoff
Chicken Chow Mein
I’ve made some synfree crustless quiche to accompany my chunky ham and bean soup for my lunches this week. They’re low fat options that keep me away from snacking on crisps or other synned foods. I’ve also got some Ryvita dark rye crispbreads to add a bit of crunch to the meal.
Breakfasts will be either weetabix with a splash of milk and water with fresh fruit or fresh fruit with a mullerlight yoghurt and 30g of All Bran Red Berry. I’m yearning after some really nice fresh white bread with hot butter but I know the syns wouldn’t be worth it. Perhaps I’ll treat myself one of the days!
