Last week was a very good week on the meal planning front, apart from on Thursday when I forgot to read the recipe correctly for the Beef Bourgignon and didn’t realise it would take over 2 and a half hours to prepare and cook the dinner. Time we didn’t have before hubby had to go out, so I prepared the meal anyway and left it cooking in the oven whilst I put Little Mr to bed. It was well worth waiting for the following evening as it was really tasty and something we’ll definitely eat again.
This week we’ve got another busy week ahead so we’re looking for quick and easy meals to cook after work. We’re going to use the slow cooker again this week. Campfire Stew was a real winner last week so much so it’s appearing on the menu again this week. We’ve got a lot of chicken to use up this week which is fine by us as we do like chicken but it’s nice to see other meats on the menu too.
This week we’ve got the following meals planned;
Chicken and Mushroom Stir Fry with SW chow mein sauce
Burger in a bowl
Sweet and sour chicken with rice
I’ve been trying to make some small changes with the carbs that we’ve been eating. I’ve been following the Extra Easy SP plan of late to try and boost my weightloss and I’ve actually enjoyed swapping potatoes for swede and filling my plate with vegetables rather than rice or pasta.
We’re celebrating my Grandad’s 80th birthday at the weekend and we’ll be eating out so I hope to make wise choices at the pub but it’s not every day your Grandad celebrates such a milestone so I’m looking forward to spending some time with my Grandparents and the rest of my family.
