Meal Planning Monday – 12th January 2015

Last week I enjoyed a variety of SW friendly meals combining the Extra Easy plan with the new kick ass weightloss plan, Extra Easy SP. Extra Easy SP basically utilises the speed and protein foods helping to speed up weightloss. There’s no carbs, no fromage frais and no yoghurt so it was a bit different to the plan that I had been following at the end of last year.

Of course, the family didn’t follow this plan so we were cooking a combination of meals to make sure Little Mr still got his dairy, protein and carbs as well as hubby of course. We are still making progress with Little Mr eating the same foods as us, he doesn’t like tomato based foods so won’t eat lasagne, chilli or spaghetti boblognese but of course, loves pizza! He likes chicken, sausages and fish fingers so usually combine our main meal with one of these and he’s a happy little boy.

This week, we’re going to use the slow cooker to help us with our meals. We’re still adjusting to being back at work and if you’ve seen my updates on social media of late, you’ll know that Little Mr isn’t sleeping very well so we are trying to snatch 40 winks wherever possible and the slow cooker really does help save time. I’m still looking for more slow cooker meals to perfect, I’ve got a small collection of fail-safe recipes but would love to expand on the recipes we can successfully cook.

This week, we’re planning on eating the following meals;

SW slow cooker campfire stew (gammon)
SW diet coke chicken
Slow cooked jacket potatoes with chilli con carne and salad
Beef Bourgignon with swede mash
Cottage pie with seasonal vegetables

We’ll be using up some of the stocks in the freezer, we still have a whole load of frozen vegetables to use and we’ll be defrosting the chilli that I made a couple of weeks ago for a quick evening meal on Wednesday where we don’t have much time.

Breakfasts are mostly eaten at my desk at work but I prepare a lot of my fruit the night before so I can literally grab it and go in the morning. I’ve been enjoying mullerlight yoghurts topped with fruit and all bran or weetabix with fruit for a SP friendly option.

For lunch, I’ll be having crustless quiche with my usual chicken salads. I might make some soup if I get chance but of course it’s all dependent on Little Mr settling off to sleep quickly of an evening.

We shop every week for our fresh produce and either shop in store or get a delivery booked in if we’ve made plans. We do tend to shop wherever we have vouchers and at the moment, Sainsburys are winning our custom with their awesome savings coupons. We do tend to buy pretty much everything in one shop as it saves time but do sometimes buy our frozen vegetables in bulk from Farmfoods or Iceland dependent on quality and price.

    I’m intrigued by “Slow cooked jacket potatoes with chilli con carne”. How do you slow cook the potatoes? Looks like a great week!

    Everything sounds yummy. Fellow SW follower here. My fav slow cooker meals on SW are their pulled pork recipe, sausage casserole using the sainsburys be good to yourself sausages and lasagne x

    I’ve just joined SW and looking forward to trying out SP but I have a few months before it’s recommended for me.

    I had my doubts, but as jacket potatoes were already on the menu for today I popped them in my slow cooker – amazing – it worked! Thank you for the tip :)
