A salad for all seasons

I’ve always loved a good salad. I remember living at home, back in the day with my Parents. Friday night was salad night. My Mom would always make a fantastic salad with literally everything on the plate; lettuce, cucumber, salad onions, tomatoes, deli meat and a homemade coleslaw. The perfect accompaniment was one or two rounds of freshly baked crusty bread, it was lovely.

 Fast forward fifteen or so years and I’m now making the same legendary salads like my Mom used to. They’re so versatile and you can eat them on their own or with a meal. Many readers will know that I’m following a Slimming World diet which encourages members to eat healthy foods with plenty of fresh fruit and vegetables. I’ll happily credit my successful weight loss over the last four months to the salads that I’ve been taking to work for my lunch. My lunches are always full of my favourite vegetables that fill me up and leave me feeling satisfying.

What is in my salad

Lettuce (my favourite is Florette Classic Crispy)
Cucumber
Spring Onions
Celery
Radish

Of late, we’ve been adding various additional ingredients to my lunches including pickled gherkins, jalapenos and pickled beetroot. Absolutely delicious.

    I can’t get enough of salad and the base for mine is pretty much the same as yours although I’m not massively keen on radishes. I think you’ve had some Subway inspiration with the extras :) x
