This easy to make soup is packed full of ingredients which on the Extra Easy Slimming World plan is completely synfree. It’s a very filling soup which is popular for helping to speed up weightloss hence the name, Speed Soup. I made a batch this week and it makes about 6 really good size portions. I had it for lunch at work and found it helped to fill me up for a good few hours.
You will need a couple of large saucepans or a really big pot to cook it all up in.
2 tins of chopped tomatoes
1 tin of baked beans
1 tin of mixed bean salad
2 stock cubes
1 mixed peppers
Wash and chop up all the vegetables into chunks
Put everything into a large pan (or two like I had too!)
Cover the veg with just enough water
Boil then simmer until all the vegetables are soft and tender
You can either blend the soup into a beautiful broth or keep it chunky
Add seasoning to taste
Voila, easy Speed Soup!
