Another week into October and it’s definitely Autumnal outside so we’re reaching for warming filling comfort foods that ease the fact that the evenings are getting darker much earlier now.

Our meal planning for this week has revolved around the ingredients we’ve got left in the fridge, freezer and cupboard as we don’t get paid until Tuesday and can’t afford to do our usual weekly shop before then. We’ve got quite a bit of chicken left in the freezer as well as lean mince beef and lots of vegetables so we’re hardly going without. As usual, our meal planning has taken into account, this weeks activities and hubby has Parents Evening until late on Tuesday, I also have weigh in and Little Mr is at his Grandparents house in Staffordshire so Tuesday evening after work will be a bit of a rush.
Here’s the evening meals we’ll be having this week;
Lemon and Herb Chicken with Savoury rice and Vegetables
Beans on Toast
Mexican Chilli Chicken Cups (SW recipe)
Speedy Veg and Chicken Rice (SW recipe)
Bacon, Squash and Sweet Potato Stew (SW recipe)
Meatball Pasta Bake (SW recipe)
I’ll be making some soup for my lunch at work (Brocolli and Potato) whilst hubby will have his usual chicken salad sandwiches. Little Mr eats well at his Nanny and Grandads throughout the week and sometimes even gets a roast dinner for lunch. Lucky little man.
