Another week, another meal plan for the week ahead. We have been sticking to the meal plan really well over the last 12 weeks and I’m really pleased with the foods that we’ve been eating. Every night we eat home cooked meals which are brilliant on my slimming world friendly diet and great for Little Mr and hubby too.
This week hubby is on half term holidays whilst I’m working the beginning half of the week. In previous years half term has always led to us eating comfort food (or takeaway) which isn’t great for the wallet or the waist line but this holiday is different. We have a plan and we intend sticking to it.
The meals we have planned for this week are
Beach burgers with fries (SW recipe)
Mild chicken curry with lemon rice (SW recipe)
Chicken kievs, mixed veg and wedges
Griddled gammon and salad
Lemon and Herb chicken with savoury rice and oven roasted veg
Bacon, squash and sweet potato stew (SW recipe)
Cottage Pie (SW recipe)
We’re really enjoying the wealth of recipes we’ve found on the Slimming World website and on the internet. There’s lots of inspiration available online and I’m surprised at how some of our favourite dishes can be made with low fat alternatives and actually they are really delicious.
For breakfasts this week, I’ve been enjoying a mix of overnight oats (porridge oats, fruit and a yoghurt) weetabix and fruit, and fruit, yoghurt and All Bran.
For lunch, I’m still enjoying my chicken salads with additional beetroot and pickled gherkins. I just love them at the moment. I’m totally blaming the Subway salad I had a few weeks ago. I want to get some jalapenos to chop up for my salad too, they give an extra kick to it which I really like.
