It’s been a while since I’ve joined in with Meal Planning Monday, even though as a family we still do sit down on a Sunday and plan what we’re going to eat throughout the week. We’ve made more of an effort to eat healthily of late, both me and hubby are keen to lose weight and we’re now cooking a lot of meals with Little Mr in mind too. If we’re having a casserole I’ll make sure I save some of the vegetables to cook up separately for him so he’s got some fresh vegetables to eat throughout the week. I’m really vigilant that he needs to see us eat good wholesome healthy meals and in turn that he does too. Watch out for my weaning update coming later this week.
Here’s what we’re planning for our meals this week…
Monday: Toad in the hole with mashed potato
Tuesday: Beef casserole (made in the slow cooker)
Wednesday: Pork chops with garlic and dill served with winter vegetables
Thursday: Cod steaks with a lemon and parsley sauce
Saturday: Spaghetti Bolognese
For breakfast I’ll be having wholemeal bread toast or low fat natural yoghurt with fruit and granola. Lunch is still an issue for me and I need to get more disciplined with making time to make it and sitting down to eat it without rushing or leaving it altogether. I should perhaps eat when Little Mr eats and then we can both can enjoy a meal together.
