Easy Vegetable Soup…

For many it’s been a snowy weekend. Here in the West Midlands we’ve had about 4 inches of snow but i’m glad to report that today’s slightly warmer temperature is rapidly melting the white stuff so the roads will hopefully be drive-able tomorrow.

So to warm up on this wintery afternoon, why not make some easy peasy Vegetable Soup.

Serves: 2 -3 portions

Ingredients:
3 medium sized carrots, diced
1 medium turnip, diced
1 large onion, diced
2  Vegetable stock cubes
2 cloves of garlic, chopped
1 tablespoon of tomato puree
Enough water to cover the chopped veg
Salt and Pepper to season
Low calorie cooking spray

1. Peel and chop all veg into chunks
2.  Spray a saucepan with cooking spray
3. Sweat veg and garlic for a good 10-15 minutes in saucepan
4.  Crumble in stock cubes, add enough hot water to cover the veg
5. Bring to boil and simmer for 15 minutes or until veg is tender
6. Blitz with hand blender to form a smooth soup consistency
7. Enjoy!

Best bit about this soup is that on Weight Watchers all the ingredients are free (except the stock cube) however as you’re serving it over 2 or 3 portions it equates to Zero ProPoints, how fab is that? {sig}
