Meal Planning Monday 02.01.2012


It’s a new week with renewed determination to get well on the way to losing the next 4 stone so I’ve planned our meals with a budget (both in WW terms and money) in mind. Food shopping has got so expensive, we used to be able to spend less than £50 per week (two adults and a dog, breakfast/packed lunches/dinners) but we’ve noticed that our weekly shop has been coming in at about £75. We simply cannot afford this and so we’re going to try and buy less fresh vegetables and opt for frozen instead. I love to cook from scratch but we’re going to have to be more savvy with what we buy. Hubby bought 2 chicken breasts for our dinner this evening from a local supermarket and it cost £3.30. That’s so pricey and I’m not sure we can afford to keep paying these kind of prices for 2 pieces of meat.

Anyway rant over and here’s what I’ve planned for our meals this week:

M) Chilli Meatballs with rice (my all time favourite meal)
T) Ovenbaked fish and chips with mushy peas (post weigh in meal)
W) Sausage casserole
T) Chicken with low fat mozzarella wrapped in bacon medallions
F) Mixed vegetable pearl barley rissoto (new recipe to try out)
S) Chicken korma and rice (WW recipe)

Breakfasts this week will be either crumpets and jam, or 40g granola with yoghurt and fresh fruit.
Lunches will include soup or ham salad wraps

Got to stay on track properly this week because need to see a weightloss a week on Tuesday. I’m really looking forward to getting back into it and seeing what 2012 has to offer.

    Have you considered making more vegetarian meals? I’m a huge fan of lentil curries, veggie lasagna, moussakas and stuff. Cost way less and if you add some grains you still get your protein for the day! That risotto sounds delish but I am crap at making them!

    Sounds yummy, have you tried turkey breasts instead of chicken, low in PP and usually cheaper than chicken. They don’t taste as nice in my opinion if you have them on their own but in a curry or sauce I don’t notice the difference.
